Gastronomy Route - Flavours with values
Our cooking philosophy is about ingredients genuinely originated in this region, some of them are the rice, the olive oil, the 'segureño' lamb, rabbit, vegetables, beans, the serrano snail, autochthonous variety of olives, fruits like the moniquí apricot and monastrell wines.
Our goal is to tell something through our menu, we're using the same methods and ingredients used by our ascendants, in an ecological way as they did. We want to preserve the history of our cooking methods and traditional recipes. And, at the same time, to teach and to learn from them.
To socialize our routes and activities with the population of Campos de Hellín has always been a priority in La Escarihuela, and obviously, we don't forget the tireless hands that worked a land which has given so much to us but we sometimes forgot to give something in return.
